Ingredients

2 oz. dried taro leaves or 6 c of kale, packed, or a combination of both

6 oz of sliced mushrooms

2 tbsp minced ginger

2 Thai chilies (more or less depending on 

2 Tbsp chopped garlic

4 c coconut milk

2 tsp salt

Procedure

Soak taro leaves in water overnight to clean and rehydrate. (not necessary if using ckale)

Day of cooking, sautee ginger, chilies, garlic, salt with ¼ c oil.

Add taro leaves or kale and coconut milk. Simmer with lid on for one hour stirring frequently.

Remove lid, add mushrooms, and let simmer until most of coconut milk reduced. About 30 minutes.
