Prep and cooking time: 3 hours

Ingredients

1 kilo beef tongue, cleaned thoroughly

2 tablespoons butter

2 tablespoons chopped onions

2 cups water

1 cup tomato sauce

2 teaspoons gin

1 potato sliced

2 teaspoons Worcestershire sauce

1 tablespoon brown sugar

1/2 teaspoon chopped siling labuyo (chili pepper)

1 tablespoon chopped siling haba (finger chili)

salt to taste

Procedure

1. Scald the tongue in boiling water then scrape clean. Rinse.

2. Cut into cubes then cook in salted water until tender. Set aside. 

3. In a pan, heat the butter and sauté the onions and cubed tongue.

4. Add water, tomato sauce, gin and potatoes. Simmer until potatoes are tender.

5. Season with Worcestershire sauce, sugar, sili, salt and pepper. Cook for a few more minutes.

Serves 4-6 persons
