Ingredients

1 600-gram poached chicken

2 tablespoons butter

1 thumb-sized ginger (cut into strips)

1 tablespoon onion

½ teaspoon minced garlic

¼ teaspoon annatto powder

1 portion curry powder

8 tablespoons coconut milk

1 teaspoon sugar

¼ teaspoon ground black pepper

3 bay leaves

½ carrot (cut into cubes)

½ potato (cut into cubes)

1 tablespoon bell pepper

2 cups water

Procedure

Melt butter in a heated wok. Sauté garlic, onion, and ginger. Add chicken, ground pepper, and annatto powder. Sauté until pink color on chicken is gone. Add potato and sauté for 2 minutes. Add water, sugar, curry powder, bay leaves, carrots, and bell pepper. Simmer for 5 minutes. Add coconut milk when the chicken is almost cooked. Simmer for another 3 to 5 minutes. Enjoy! Serves 2-4.
