Serves 4 

Like many dishes in the Philippines, Chicken Asado is a mixture of both Spanish and Chinese influences. Though it has a Spanish name, its ingredients and cooking method are Chinese. It is a popular snack or light lunch when served with a bowl of steaming rice of bread rolls.

Ingredients 

3 tablespoons canola oil

1/2 onion, thinly sliced

2 garlic cloves, crushed

2 pounds boneless, skinless chicken thighs, cut into 2-inch cubes

2 cups water

1/2 cup soy sauce

2 tablespoons sugar

2 bay leaves

Pinch of freshly ground black pepper

Procedure:

1. In a large saute pan or skillet, heat the oil over medium-high heat and saute the onion for 3 to 5 minutes, or until transparent. Add the garlic and saute until fragant, about 30 seconds.

2. Add the chicken and continue to saute for 3 to 4 minutes, or until the chicken is no longer pink.

3. Add the water, soy sauce, sugar, bay leaves, and pepper. Simmer for 10 to 20 minutes, until the chicken is tender and the sauce has reduced to the consistency of thick stew. Taste and adjust the seasoning as desired before serving.
