Nora Daza was undoubtedly the Filipino expert on French food during her time. She was the first to set up a French restaurant in Manila -- Au Bon Vivant -- which became the go-to place for gourmands and the well-heeled in the late 1960s. When she comes up with her own recipe for a French dish, we can be sure it's good.

Serves 6

1 kilo beef tenderloin, trimmed
Maggi seasoning
1/2 pound butter, in chunks
1 cab sugar peas
1/2 can mushrooms, sauteed in butter
1/2 kilo potatoes, fried in butter

Season beef with salt, Maggi seasoning and pepper. Grill both sides until medium done. Slice, transfer to a platter. Dot hot meat with chunks of butter . Serve with green beans, carrots and potatoes.
