Chef Niel Salvatera brings us another of Kusina de Manila's famous dishes, Red Snapper Delight.

Ingredients

1 red snapper (fried)

1 tbsp garlic

1 tbsp onion

1 ½ tbsp sugar

2 tbsp white vinegar

1 cup chicken stock

2-3 tbsp cornstarch

3-4 tbsp house-blend sauce (sweet-and-sour sauce)

5 julienned strips red-bell pepper

5 julienned strips green-bell pepper

½ cup julienned carrots

1 tbsp julienned ginger

5-6 strips tomatoes

salt and pepper to taste

Procedure

Prepare fried red snapper on a serving dish. Saute garlic, onion, and ginger until light brown. Add the vegetables and sauté for another 30 seconds. Add the chicken stock, house-blend sauce, and let it boil. Add sugar and vinegar. Let it simmer for a minute or two. Then, add cornstarch to thicken the sauce. Pour this sauce on the fried snapper and serve while hot.

Serves 3-4
