Serves 15

Ingredients

4 lbs. cubed pork shoulder
5 lbs. cubed potatoes
12 oz. canned tomato paste
1 tsp. minced garlic
½ cup chopped yellow onion
2 large chopped tomatoes
1 cup tomato sauce
½ cup whole green olives
1 cup fresh red bell pepper cut to ½ to 1 inch squares
1 tsp. black pepper
1 tsp. lemon pepper
2 tsp. salt

Procedure

  1. Saute garlic, onions, fresh tomatoes till onion is translucent.

  2. Add the pork.

  3. Add the tomato sauce and tomato paste.

  4. Cook on low heat, cover, till the pork is tender about 20 minutes.

  5. Add the potatoes, olives, and bell peppers.

  6. Cook until the potatoes are tender.

  7. Add the seasonings.
