Instant Pot Spanish Sardine-Style Bangus

When you miss Filipino delicacies like Spanish Sardine-style Bangus (milkfish) but don’t have a Seafood City nearby, turn to the kitchen of Do-It-Yourself Cookery. I have seen a lot of youtube recipes online on how you can make these delicacies at home with an Instapot or airfryer. The Spanish Sardines style Bangus recipe I’m sharing is a combination of Louie Boy Baello’s recipe and Kawaling Pinoy’s recipe.

Ingredients

6-8 cloves garlic

4-5 bay leaves

4 sweet pickles (chopped to short slices)

½ can green olives

1 carrot (sliced or chopped floret style)

1 tsp. whole black pepper

1 tsp. salt

4 red chili peppers (depends on how spicy you want it)

1 chopped shallot (or half an onion)

2 cups olive oil

1 cup water

1 bangus (milkfish), cleaned (eviscerated and scaled) and cut into 4 pieces

 

Procedure

1)    Brine fish in 6 cups water and ½ cup salt for 30 minutes before cooking

2)    Place the ingredients and aromatics at the bottom of the Instapot pan to prevent the fish from sticking to the pan.

3)    Add the fish, oil and water

4)    Pressure cook for 1 hour (the fish bones will be softer if you cook it for a few minutes more).
