Bella Yuchengco’s Crab and Cucumber

Ingredients

1 crab
2 Cucumbers

Vinegar Sauce: 5 oz dashi
                            2 tbsp sugar
                            6 tbsp rice vinegar
                            2 tbsp light soy sauce
                            1 tbsp fresh ginger juice

Procedure

  • Boil crab in salted water. Pick meat

  • Slice cucumber to thin strips. Sprinkle with salt. Let stand 5 minutes. Wring out moisture.

  • Make vinegar sauce. Combining everything except the ginger juice and bring to a boil. Cool and add ginger juice.

  • Arrange crab and cucumber and pour sauce
