In my children’s book, “Ang Alamat ng Lumpiang Shanghai” (The Legend of the Fried Spring Rolls), I chose to write a story about a dish that is universal. It’s loved by both children and adults. It is also very versatile. We have so many different iterations of the lumpia like the lumpiang gulay, lumpiang togue, lumpiang ubod, lumpiang hubad, lumpiang Bacolod, and even turon (banana spring rolls) is a lumpia, right?
