Leche flan, the ubiquitous dessert in Filipino parties, is most often cooked with at least eight egg yolks. Here's a simplified, lower-cholesterol recipe that tastes just as sweet.

Ingredients

1 can condensed milk
1 can evaporated milk
2 eggs
1 tsp Vanilla Extract
1/2 cup brown sugar

Procedure

Caramelize the 1/2 cup brown sugar on the flan container at very low temperature.  Cool until the caramel has hardened.

Mix the rest of the ingredients in a bowl then pour over the caramel in the flan container.

Bake at 375 degrees Bain Marie style (double boiler) for 1 hour to 1 hour and 5 minutes.  After one hour, tap the top of the flan to check firmness.  Once flan is cooked, turn off the oven; you may continue to leave the flan in the oven to cook and settle a bit more.  You may refrigerate if not to be served immediately but make sure you take container out of the refrigerator 1 hour before serving to get flan to room temperature.
